Important Attributes

All players:

Strength
Awareness
Speed
Agility
Consistency

Some will be more important to certain position over others (eg. Speed for WR/RB/CB vs. Linemen)

QB:
Throwing Power
Throwing Accuracy (Short, Medium & Deep)
Play Action
Throw on the run

*Traits - Tight Spiral

HB:
Elusiveness
Ball Carrier Vision
Trucking
Juke
Stiff Arm
Spin

*Traits - Brace for hits & Fight for yards

TE & WR:
Catching
Catch in traffic
Jump
Release
Route Running
Spectacular catch

*Traits - Drop open pass & Both feet down

O-Line:
Run Block
Pass Block
Impact Block

(Strength is really big for these guys, D-Line & Linebackers, also for Guards, Agility affects their ability to pull out and block down-field on screens)

D-Line:
Tackle
Block-shedding
Finesse moves
Power moves
Pursuit

*Traits - Swim move, Bull rush, High motor

Linebackers:
Tackle
Block-shedding
Pursuits
Zone & Man coverage
Play reaction

*High motor

DB's:
Zone & Man coverage
Play reaction
Jump
Press

*Traits - Play the ball & high motor

Do I just use scouting to look at player attributes to see who I might want to pick up?

Yep. The items in the OP are the most important traits to research for the different positions. You may also have additional attributes that you value. For example, I always check speed for CB and WR, as well Consistency for all players.
